Chunmee translates as 'precious eyebrow', reflecting the beautiful shape of this Special Quality Chinese green tea. Organically produced in the Zhejiang Province, this tea is classically hand-rolled and produces a lovely yellow-green liquor with a fresh and slightly toasty character.  Find notes of toast, mid-summer plum, and earthy moss in each mellow cup.

Q&A with Bree, founder and tea artist

Q: Any special tips to get the most out of my tea?
A: To get the best flavour from your green tea, focus on the three 'T's: time, temperature, and tea quantity. With any new tea, it's helpful to taste as it steeps to find the optimal time based on your preferences. For this tea, start tasting at around 1.5 minutes, aiming to find the sweet spot before 4 minutes. Keep the water temperature below 90°C to avoid scalding the leaves. No thermometer? No problem—let boiled water sit uncovered for about 3 minutes. For the amount of tea, the rule of thumb is 2 g per cup of water. For this tea, that's about 1.5 tsp or one scoop.

Q: I've heard that organic teas don't taste as good as non-organic teas. Is that true?
A: In early days of transition to organic production on large tea farms (smaller producers typically farm using organic practices even if they aren't certified because it's better for them and the plants), the tea quality did suffer. But now there are some excellent organic teas, this being one of them!
