Q: Marshmallow root, any relation to marshmallows?

Yes! According to the U.S. National Confectioners Association, marshmallow root was used in France in the 19th century to make confections. The sap was blended with egg whites, sugar, and cornstarch and the everlasting marshmallow was born. Although today the sugary treats no longer include the plant, the name stuck. Q: This tea is sweet but I thought it would be more so because of the elder flower?

That may be because we are used to consuming elder flower in cordials and syrups which are mostly sugar. If you are looking for a super sweet treat out of your tea you can turn your rooibos soother into a lovely simple syrup for use in cocktails or to turn into an antioxidant-rich 'soda'. Curious? Q: Does this tea work as a cold infusion?
A:
Absolutely - I love a cold infusion because it's a 'set it and forget it' way of making tea that fits brilliantly with any busy day. It's like using a crock pot for dinner, except for your cup of tea so you can grab it and replenish on your way to jump into life's next great adventure. General ratio for cold infusion: 2 tsp tea to 200 ml (a little more than 3/4 cup) cold water. Pour the water over the tea, close the jar, and give things a shake. Store in the fridge 4 or more hours. Strain off and serve over ice or re-heat.

Pour 1 cup (250 ml) hot water (95 C - 100 C) over 1 to 2 tsp of tisane. Let steep 5+ minutes.
