There's a reason tea connoisseurs around the world keep returning to Keemun. Hailing from the misty hills of Anhui Province in China, Keemun Mao Feng sits at the top of the world's most celebrated black teas, prized for its distinctive character and the way it opens up across multiple infusions. Mao Feng 毛峰 translates to "fur peak". 毛 (Mao) refers to the small white hairs that cover the young leaves, and 峰 (Feng) refers to the peak shape of the processed leaves. These are fine, wiry leaves hand-selected in the earliest weeks of spring, when the plants are just waking up and the leaves are at their most delicate and flavour-forward.
A Cup That Unfolds, One Steep at a Time
Bring fresh water to a gentle boil, settle in, and let this tea do what it does best. The liquor pours a luminous gold to deep amber, shifting beautifully with each infusion. A honeyed aroma rises first, followed by quiet notes of dried pear and a wine-like depth that is distinctly, unmistakably Keemun.
This is one of Bree's personal favourites for a Gong Fu Cha (功夫茶), or “tea made with dedication and care”, session. And once you've experienced this tea leaf by leaf, steep by steep, it's easy to understand why. Wiry, intact leaves mean this tea holds its character beautifully across multiple infusions, revealing new layers each time. There is no astringency here — only a toasty, clean finish that lingers softly and invites the next steep.

Continental Style: Pour 1 cup boiling (or just under) water over 1.5 tsp tea. Cover and steep 2 to 4 minutes per infusion.
Gong Fu Style: Pour 1/2 to 3/4 cups boiling water over 3 tsp tea. Cover and steep 30 seconds per infusion. Try “topping” by adding a little more dry tea on the 3rd or 4th infusion.
